SHOOFLY PIE 
Dough for 9" pie crust
1 c. flour
1/2 c. sugar
Pinch of cinnamon
4 tbsp. butter
1/2 c. boiling water
1/2 c. molasses
1/2 tsp. baking soda

Line a deep 9" pie plate with pie crust, making a high rim. Mix flour, sugar and butter together with hands until crumbly. Set aside. Add boiling water, cinnamon and baking soda to molasses and beat with a spoon until foamy. Pour molasses mixture, into pie shell. Add crumb mixture, pressing it down into the molasses filling but leaving some on top. Bake at 350 degrees for 35 to 40 minutes until bubbly and brown. (For drier pie, 1 1/2 cups flour.) Serve with whipped cream or ice cream.
