CREAMY POTATO SALAD | |
3 lbs. potatoes, cooked, cooled 2 scallions, thinly sliced 2 hard-cooked eggs, thinly sliced 2 stalks celery, thinly sliced 1 c. mayonnaise 1/2 c. dairy sour cream 1 tsp. salt 1/8 tsp. BLAIR black pepper 1/2 tsp. BLAIR paprika 2 tbsp. lemon juice Cut potatoes into chunks and place in a large bowl. Add scallions, eggs and celery; toss together. Combine mayonnaise, sour cream, salt, pepper, paprika and lemon juice; mix thoroughly. Pour dressing over potatoes and toss lightly. Chill. Yields: 4 to 6 servings. |
