ORIENTAL CHICKEN CASSEROLE 
1 c. cooked chicken, cut up (2 c. is better)
1 c. celery pieces
2 tsp. onion, finely chopped
1/2 c. slivered almonds (if can't find - use water chestnuts, or both)
1 1/2 c. cooked rice
3 hard boiled eggs, cut in thin slices
1/4 c. pimento pieces
1/4 c. mushrooms, sliced
1 can mushroom soup
Salt & pepper
1 tbsp. lemon juice
3/4 c. mayonnaise
1/4 c. sherry wine
2 c. crushed potato chips

Place all ingredients in large bowl except potato chips and mayonnaise and sherry. Mix mayonnaise with sherry and add to above, gently stirring in sliced eggs. Place in greased Pyrex dish at least 9 inches square. Top with crushed potato chips and bake at 350 degrees for about 30 minutes or until bubbly. All this can be mixed a day ahead except the potato chips. Serves 8 people. Do not cover dish, and if it cooks longer be sure to turn the oven down.
