SUMMERTIME COOLER PIE 
1 sm. (8 oz.) can crushed pineapple
1 sm. box lime Jello
1 c. buttermilk
1 sm. (8 oz.) container Cool Whip
1/2 sm. jar apricot preserves
1 graham cracker crust
Fresh strawberries and kiwi fruit (or fresh fruit in season)

Place pineapple in medium-size bowl. Add box of lime Jello and stir until dissolved into the juice of the pineapple. Add 1 cup of buttermilk and stir. Add entire contents of 1 small container of Cool Whip and stir.

Pour into prepared graham cracker crust. Top with sliced strawberries and kiwi fruit or your choice of fresh fruit in season. Heat apricot preserves in saucepan on top of stove until preserves are melted. (Do not boil). Brush on top of fruit and enjoy!
