SALMON SCRAMBLE SUPREME 
1 1/2 lbs. canned salmon
1/3 c. dry roasted peanuts, chopped
1/2 c. green onions, chopped
3/4 c. cheddar cheese, grated
8 eggs
1 tsp. water
1/2 tsp. pepper
3 tsp. butter

Combine peanuts, onions and cheese and set aside. Beat eggs, water, salt and pepper together. Melt butter in large frying pan over medium heat; add egg mixture, then chunks of salmon. Cook slowly, gently lifting with spatula to allow uncooked egg to flow under. Cook until set. Transfer to serving platter and top with cheese mix. Serves 4 to 6.
