CALICO BAKED BEANS FOR A CROWD 
2 c. green limas, cooked and drained
2 c. large limas, cooked and drained
2 c. red kidney beans, cooked and drained
1 qt. pork and beans or leftover baked beans
6 slices bacon, diced or 1 c. leftover ham bits or 1/2 lb. sausage or ground beef
1 1/2 c. onions, cut up
3/4 c. brown sugar
2 tsp. salt
1 tsp. dry mustard
1 clove garlic, minced
1/2 c. vinegar
1/2 c. ketchup

Combine in large casserole, reserving liquids, the first 4 ingredients. Fry bacon and drain off excess fat. Add onions and fry briefly. Add sugar, salt, mustard, garlic, vinegar, ketchup. Cook 5 minutes and pour over beans.

Add enough reserved bean liquid to barely cover beans. Bake uncovered 1 1/2 hours at 325 degrees, adding additional liquid if beans become dry.

Options: Substitute other varieties of dry beans, including soy - but keep color contrast for an attractive dish. Omit meat altogether - still delicious!
