FRESH PEAR CAKE | |
4 c. diced pears 2 c. sugar 1 c. chopped pecans 3 c. flour Pinch of salt 1 tsp. baking soda 1 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. allspice 2 eggs 3/4 c. corn oil 1 tsp. vanilla Mix first 3 ingredients and let stand 1 hour. Stir occasionally. Sift together remaining dry ingredients. Add to top mixture. Mix well by hand. Add eggs and beat well after each egg. Add 3/4 cup corn oil and beat well again. Add vanilla and beat. Pour into greased and floured tube pan. Bake at 350 degrees for 1 hour and 15 minutes or until golden brown. TOPPING: 1/4 c. apple juice 1/2 c. sugar Bring to boil. Remove from heat, spoon over warm cake. |
