FRESH PEAR CAKE 
4 c. diced pears
2 c. sugar
1 c. chopped pecans
3 c. flour
Pinch of salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
2 eggs
3/4 c. corn oil
1 tsp. vanilla

Mix first 3 ingredients and let stand 1 hour. Stir occasionally. Sift together remaining dry ingredients. Add to top mixture. Mix well by hand. Add eggs and beat well after each egg. Add 3/4 cup corn oil and beat well again. Add vanilla and beat. Pour into greased and floured tube pan. Bake at 350 degrees for 1 hour and 15 minutes or until golden brown.

TOPPING:

1/4 c. apple juice
1/2 c. sugar

Bring to boil. Remove from heat, spoon over warm cake.

The diced pears absorb the sugar, giving each mouthful a flavorful burst. The cake portion is moist and flavorful -- the chopped pecans are essential for this effect, so don't omit them. Cake is great, even without the apple juice topping. We always bake with nutmeg and allspice berries, ground in the kitchen with a mortar & pestle. (Ground cinammon has always worked fine). Excellent recipe.
