FIESTA MEAT LOAF 
1/2 c. onion, chopped
1/2 c. celery, chopped
1/2 c. green pepper, chopped
2 tbsp. butter
1 (12 oz.) bottle Heinz chili sauce
1 1/2 lbs. lean ground beef
1 c. soft bread crumbs
1 egg, slightly beaten
1/2 tsp. salt
1/4 tsp. pepper

Saute' onion, celery and green pepper in butter until vegetables are tender. Stir in chili sauce. Combine 1/2 cup of this mixture with ground beef, bread crumbs, eggs, salt & pepper. Form into a loaf in shallow baking dish, 8 x 4 x 1 1/2 inches. Bake in 350 degree oven 1 hour. Let stand 5 minutes before slicing. Serve remaining sauce cold or hot over meat loaf.
