WALDORF SALAD 
2 tbsp. lemon juice
1/2 c. light mayonnaise
2 celery stalks, chopped
1 c. red seedless grapes, cut in half
4 McIntosh apples, cored and cut into 1-inch chunks
2 tbsp. walnuts, chopped

In a large bowl, whisk together the lemon juice and mayonnaise until well combined. Add the remaining ingredients, except the walnuts and toss to coat. Cover and chill for at least 1 hour before serving. Just before serving, sprinkle chopped walnuts over the top. Exchanges: 1 fruit, 1 fat, calories 119, calories from fat 58, total fat 6 g, saturated fat 1 g, cholesterol 5 mg, sodium 130 mg, carbohydrate 16 g, dietary fiber 2 g, sugars 12 g, protein 1 g.
