PORK IN ORANGE-MUSTARD SAUCE 
1 1/2 lb. pork loin
1 onion, sliced
2 cloves chopped garlic
1 1/2 c. orange juice
2 tbsp. country style mustard
1/4 tsp. salt
1 1/2 c. carrots
2 c. cabbage, shredded

Cut pork in 1-inch cubes. Spray Pam in large skillet and brown pork 15 minutes. Add onion and garlic, stirring frequently until onions are slightly wilted.

In a 2-cup glass measure cup, combine orange juice, mustard and salt. Add to skillet with carrots and cabbage. Cover and cook over medium heat 30 minutes. Uncover and simmer 10 minutes.
