POTATO PANCAKES | |
3 potatoes, about 3 lb. 1 med. onion 2 eggs 2 tbsp. flour 3/4 tsp. salt Dash of nutmeg, pepper Oil for frying Wash and pare potatoes. Grate on coarse grater in large bowl filled with ice water. Let stand 15 minutes. Grate onion. Beat eggs and add onion, flour, salt, nutmeg, and pepper; mixing well. Drain potato, patting dry with a clean dish towel. Add to egg mixture, mix well. In large heavy skillet, slowly heat oil, 1/8 inch deep, until very hot. Do not crowd. With spatula, flatten against bottom of skillet. Fry 2-3 minutes on each side, or until golden brown and crisp. Drain well on paper towel. Makes 12 pancakes. |
