HOLIDAY QUICK BREAD 
BASIC BATTER:

1 c. sugar
4 tbsp. vegetable oil
1 c. milk
1 egg
1 tsp. vanilla extract
2 c. all-purpose flour
3 tsp. baking powder
1 tsp. salt

Preheat oven to 350 degrees. Mix together sugar, vegetable oil, milk, egg and vanilla extract in a large bowl; beat well. Add flour, baking powder and salt. Pour batter into a greased and floured 9 inch loaf pan. Bake for 50-60 minutes, or until wooden toothpick inserted in center comes out clean.

Cranberry Bread: Add 1 teaspoon orange extract, 1 teaspoon cinnamon and 1 1/2 cups chopped cranberries to Basic Batter. Bake as above.

Fresh Apple Bread: Make Basic Batter as above, except divide sugar and mix together 3/4 cup sugar (of the 1 cup total), vegetable oil, milk, egg and vanilla extract in a large bowl; beat well. Add flour, baking powder and salt. Pour half the batter into a greased and floured 9 inch loaf pan. Toss 2 cups chopped apples with the remaining 1/4 cup sugar and place over batter. Pour remaining batter over apples. Bake for 50-60 minutes or until wooden toothpick inserted in center comes out clean. Yield 8-12 slices.
