1/2 lb. butter
2 c. sugar
1/4 lb. cream cheese
1 tsp. vanilla
1 lemon rind, grated
5 eggs, separated
3 c. self rising flour
1 c. milk

Cream butter and sugar together. Add cream cheese, vanilla and lemon rind. Separate eggs and add yolks to above. Add flour alternating with milk. Blend well after each step. Lastly, beat egg whites until very stiff, fold into mix. Bake at 350 degrees for 1 hour.

This recipe makes 2 loaf pans or 1 angel food type ring. Cut time to 50 minutes for loaf pans.
