SWEET POTATO PIE 
2 lg. sweet potatoes
2 egg whites or 1 egg, beaten
1 tbsp. sugar
1/4 c. raisins (optional)
1/2 tsp. cinnamon
2 tbsp. soft butter
1 c. 2% milk
9-inch ready-made pie crust or make your own

Wash potatoes carefully; cook in a covered saucepan until soft. Peel and mash in a medium bowl, (you should get about 1 1/2 cups of mashed potatoes). Add other ingredients in order given. Mix well. Pour into 9-inch pie shell. Bake at 450 degrees until lightly browned. 8 servings.

One serving (1/8 recipe) = 2 starch and bread exchange; 2 fat exchange; 220 calories; 30 gm. carbohydrates; 4 gm. protein; 11 gm. fat; 232 mg. sodium; 3 mg. cholesterol; trace of fiber.
