STIR FRY IN A BASKET 
2/3 lb. potatoes, peeled & shredded
1/2 c. cornstarch
1/4 tsp. salt

Shred potatoes, rinse well with cold water. Drain and toss with cornstarch and salt. Make sure every shred is coated. Place potatoes in large strainer with long handle. Place another strainer on top. Press potato mix. Heat oil and deep fry potatoes. Place stir fry into potato basket.
