FRESH APPLE CAKE 
1 1/4 c. cooking oil
2 c. sugar
3 eggs
3 c. sifted flour
3 c. peeled, chopped apples
1 c. chopped nuts
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla or rum flavoring
1 tsp. cinnamon

Sift dry ingredients together. Beat eggs. Add sugar and oil. Beat 3 minutes. Add flour slowly. Fold in apples, nuts and flavoring. Bake in 2 floured and greased loaf pans at 350 degrees for about 1 hour or until toothpick test proves cake done.

TOPPING:

1 c. brown sugar, packed
1 stick butter
1/4 c. milk

Boil 3 minutes. Poke holes in cake. Pour topping over hot cake.
