COLD CUCUMBER SOUP 
2 sm. cucumbers
4 c. chicken stock
1 c. sour cream
Salt & pepper to taste
Lemon rind

Peel and dice cucumbers. Cook cucumbers in chicken stock until the cucumbers are soft. Mix cooked cucumbers and stock with sour cream in blender. Season with salt, pepper and lemon rind. Chill thoroughly. Serve cold sprinkled with parsley or chives.
