ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. flour
1/4 tsp. baking powder
2 c. zucchini, raw grated coarse, packed, not peeled
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
3 tsp. vanilla
1/2 c. walnuts, chopped (optional)

Beat eggs until light and fluffy. Add sugar, oil, vanilla and blend well. Stir in zucchini. Sift together dry ingredients. Blend in cream mixture. Bake in two greased and floured loaf pans for 1 hour at 350 degrees.
