FROZEN CORN, GREEN BEANS
18 c. corn, cut off cob, uncooked
1 lb. butter
1 pt. half & half

Bake 325 degrees for 1 hour. Stir every 15 minutes. Cool; place in freezer bags or plastic containers.

ANOTHER METHOD: Wash corn cobs well; place 5 ears in glass casserole with 2 to 3 tablespoons water and microwave for 7 to 8 minutes on high; immediately place corn into a sink of cold water (3 minutes). Cut corn off cobs with sharp knife; bag into 1 quart zipper-locked bags; freeze right away in a single layer (don't pile corn up until after frozen). When ready to serve, thaw and heat through; add 1 to 2 tablespoons butter, salt and pepper to taste. GREEN BEANS: Stem freshly picked green beans; wash thoroughly; place 2 quarts in a glass casserole dish with 2 to 3 tablespoons water; microwave on high for 4 to 5 minutes. Plunge into a cold water bath for 2 to 3 minutes, then place in 1 quart bags; freeze in same way as corn. When ready to serve, thaw; cook to boiling, then simmer for 25 to 30 minutes with little water; add seasonings, 1 tablespoon chopped onion and a slice of crisply fried bacon, broken up.

Since microwave ovens vary in power, you may need to adjust your cooking time.
