ROCKY MOUNTAIN BRISKET | |
Beef brisket 1 1/2 tsp. salt 1 1/2 tsp. pepper 2 tbsp. chili powder 1 tsp. crumbled bay leaf 2 tbsp. liquid smoke Combine salt, pepper, chili powder, bay leaves and liquid smoke. Rub meat on all sides with mixture. Place meat fat side up in large roasting pan. Cover tightly and bake 4 hours at 325 degrees. BARBECUE SAUCE: 3 tbsp. brown sugar 14 oz. catsup 3/4 tsp. cayenne pepper 6 tbsp. butter, melted 1 tbsp. dry mustard 2 tbsp. liquid smoke Salt & pepper 1/4 c. Worcestershire sauce 2 tsp. celery salt 1/2 c. water After meat is cooked, cut thin slices across the grain; mix with the barbecue sauce and simmer for 10 minutes. Serve on buns. |
