SWEET BREAD
1 c. milk
1 1/2 c. water
1 lg. compressed yeast (Red Star)
4 eggs, beaten with 1 tbsp. salt
1 c. sugar
1/4 c. melted butter
8 c. flour, plus extra flour

Heat milk and water to lukewarm (85 degrees). Dissolve yeast in water and milk and 1 tablespoon sugar. Now add sugar, salt, eggs, and butter. Last of all, add the flour. Knead well, using about another cup of flour as you knead. Knead for at least 10 minutes.

Put into a greased bowl, cover and let raise for 2 hours. Do not punch down. Roll out into 3 loaves and put into 9x5x3 inch pans which have been greased. Let raise about another hour, brush loaves with egg yolk mixed with a small amount of water; then bake at 300 degrees for about 45 minutes. Bread is baked when bottom of loaf feels hollow when tapped.

Remove from pans, cooling loaves on their sides on cooling rack.
