SWEET POTATO PIE 
2 unbaked single crust pie shells
5 med. sweet potatoes
3 to 4 qts. water
1 1/4 sticks butter
1 1/2 c. sugar
2 1/2 tsp. nutmeg
2 tsp. vanilla
1/3 c. evaporated milk
2 eggs

Wash and peel potatoes. Place in saucepan. Cover with water. Simmer for 60 minutes until ready to mash. Cream potatoes removing all lumps. Add butter, sugar, nutmeg, vanilla and beaten eggs. Mix well. Pour into pie shells and bake at 350 degrees for 50 minutes until firm.
