CREAMY POTATO SOUP | |
3 med. potatoes (about 1 lb.), peeled & thinly sliced 1 lg. rib celery, thinly sliced 1 (10 3/4 oz.) can chicken broth 1 1/4 c. water 1/2 tsp. white pepper Minced chives Combine all ingredients, except chives in pan. Bring to boil, cover and reduce heat and simmer 30 minutes or until potatoes are tender. Process in blender until smooth or mash with potato masher. Return to pan and heat thoroughly. Serve and garnish with chives. Makes 9 cups. |
