OLD CHINA TOWN PORK BURGER 
1 lb. pork sausage
1 c. enriched soft bread crumbs
1/3 c. finely chopped onion
1/3 c. finely chopped pepper
1 can water chestnuts, drained and chopped
1 egg
2 tbsp. dry sherry
2 tbsp. soy sauce
1 sm. clove garlic, crushed
1/4 tsp. ginger
6 lg. enriched sesame seed hamburger buns
Butter
1 can bean sprouts, rinsed well drained
Sweet and sour sauce

Combine first 10 ingredients, mix well. For ease of handing chill several hour if desired. Shape into patties and fry. Split, toast and butter buns. Divide bean spouts on bun bottoms and top with patty. Spoon equal amounts of Sweet and sour sauce.

SWEET AND SOUR SAUCE:

1/2 c. crushed pineapple, drained
1/3 c. catsup
2 tbsp. vinegar
2 tbsp. orange marmalade
1 tbsp. prepared mustard

In small saucepan combine all ingredients. Heat and stir until marmalade melts.
