SWEET AND SOUR CHICKEN 
Whole boned chicken breasts
1 c. each of green pepper, carrot, and onion
1 c. pineapple chunks
1/2 c. cornstarch

Sauce to marinate:

1/2 tsp. salt
1 tbsp. cornstarch
1 egg yolk
1/2 tbsp. soy sauce
1 tbsp. water

Sweet and sour mixture:

4 tbsp. sugar
4 tbsp. water
4 tbsp. ketchup
1 tsp. salt
3 tsp. cornstarch

Bone chicken and cut into 1 inch pieces. Marinate in sauce for at least 1/2 hour. Coat the meat with dry cornstarch. Deep fry in hot oil for 2 minutes and remove the meat from the oil to allow it to get hot again. Deep fry for another minute and set aside. Heat 2 tablespoon oil in wok. Stir fry vegetables, add the sweet and sour sauce and stir the mixture until it becomes thick and bubble. Pour over meat and serve.
