COFFEE SPICE PARFAIT 
1 pkg. vanilla pudding & pie filling (sugar-free)
2 c. low-fat milk
1 tbsp. instant coffee, Sanka (caffeine-free)
1/4 tsp. cinnamon
1 1/2 c. Cool Whip topping, thawed

Combine pudding mix, milk, and coffee in pan. Cook and stir over medium heat until mixture comes to a full boil. Pour into bowl. Cover surface with plastic wrap and chill. Mix cinnamon with whipped topping. Layer pudding and topping in parfait glasses. Makes 6 servings.
