1 c. heavy or whipping cream
1/2 tsp. vanilla extract
40 chocolate wafers or other thin crisp cookies
Pour the cream and vanilla into the mixing bowl. Using the electric mixer, beat the cream at medium speed until it is thick and fluffy, about 2 1/2 minutes. Layer the cookies and cream in 4 parfait glasses by heaping 1 teaspoon of whipped cream into each glass and then adding 1 cookie. Add another teaspoon of cream and another cookie until the cream and the cookie are all in the glasses. Cover the tops of the glasses with plastic wrap and refrigerate 2 1/2 hours before serving.
