KEY WEST CHICKEN 
4 chicken breasts
4 chicken thighs
6 tbsp. olive oil
1 lg. onion, sliced
3 to 4 chopped cloves garlic
2 tbsp. capers
1/2 tsp. thyme
1/2 tsp. oregano
2 cubes chicken bouillon
1/2 grapefruit, pulp and juice
1/2 to 1 c. white wine
Salt
Fresh pepper and parsley

Saute onion in oil in Dutch oven. Add chicken. Brown a few minutes. Add seasonings, bouillon cubes, grapefruit and wine and capers. Cook covered in 275 degree oven for 1 or 2 hours. (Ovens vary, so check to make sure it is cooking. Can cook at higher temperature for shorter time.)

Garnish with parsley when serving. Serves 4 to 6.
