WILTED SPINACH SALAD 
1 bunch spinach, washed & trimmed
1 c. mushrooms, sliced
1/4 c. red onion, chopped
4 slices bacon, cut into 1/2 inch pieces
2 tbsp. Tree Top frozen apple juice, thawed
1/4 c. red wine vinegar

Place spinach, sliced mushrooms and red onion in a large salad bowl; set aside. Place bacon in a small skillet and cook over medium heat until just starting to brown. Remove from heat and pour off 1/2 of the grease. Return to heat, add apple juice concentrate and vinegar and bring to a boil. Pour over spinach mixture and toss until well mixed. Serves 4 to 6.
