IT JUST LOOKS FANCY SAUTEED SPINACH | |
1 large bag of pre-washed spinach 1 small onion, diced 1 tbsp. garlic, diced 1 tbsp. good quality extra virgin olive oil (EVOO) 3 oz. Asiago cheese, grated salt and pepper, to taste dash of nutmeg dash of ground red pepper (if desired) Heat olive oil in a non-stick saucepan on medium heat. Add the diced onion and chopped garlic and sauté until softening, about 3-4 minutes. Add the spinach and begin tossing to coat with oil and garlic/onion mixture. Continue tossing spinach as it wilts and add salt and pepper, to taste. Add a pinch of nutmeg, fresh ground is best. If you like a little kick, also add a dash of ground red pepper. After spinach has wilted, approximately 5-8 minutes, remove to serving dish and sprinkle the Asiago on top. The residual heat will melt it. Note: Do not overcook or the spinach will be bitter. You just want it to get wilted. I serve this with extra Asiago and lemon wedges although most people like it just fine without the addition of lemon. Submitted by: B. Law-Morgan |
