SWEET CHICKEN AND RICE | |
4 to 6 boneless, skinless chicken breasts 1 cup white rice SWEET SAUCE: 3/4 stick butter 3 tbsp soy sauce 1/4 cup brown sugar season to individual tastes Clean chicken, then cut into cube sized pieces. Set aside. Start the rice (preferably in a rice cooker). The rice will need the time to cook. In a large skillet, melt the butter, then blend in soy sauce and brown sugar. Add additional seasonings to the sauce mixture, not the chicken. Make mixture boil, and wait until the brown sugar has a chance to caramelize (about 3 to 5 minutes). Add cubed chicken, cover, and stir occasionally. The chicken will be done when there is a nice golden color, and when the liquid has caramelized and coated the chicken.
