ORANGE - WATERMELON PICKLES 
3 qt. melon rind, sliced
1 qt. vinegar
6 c. sugar
1 stick cinnamon
1 tsp. whole cloves
1 lg. orange or 2 sm. oranges

Cut peel off melon and cut into pickle size pieces. Steam until tender or boil in weak salt water. Drain well. Tie spices in bag. Mix with vinegar and sugar in a kettle and stir until sugar is dissolved. Add melon and bring to boil. Let boil for about 10 minutes. Remove melon and boil syrup down until slightly thickened. Add melon again but do not cook.

Set aside until next morning. Grind orange, add to syrup and melon mixture and boil until melon is clear. Place in hot sterilized jar and seal.
