SPINACH WITH BASIL | |
4 lbs. fresh spinach 6 sprigs parsley, chopped 4 green onion, chopped 1/4 c. butter 2 tsp. salt 1/2 tsp. pepper 1 tsp. dried whole basil Remove stems from spinach. Wash leaves thoroughly and tear into pieces. Place all ingredients in a large Dutch oven (do not add water). Cover and cook over medium-high heat for 5 minutes or until spinach is limp. Serves 6. |
