CHOPPED APPLE CAKE 
5 med. apples, peeled & chopped
3 c. flour
2 c. sugar (1 c. white, 1 c. brown)
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
1 c. oil
2 eggs
Nuts & raisins (opt.)

Preheat oven to 350 degrees. Mix oil, eggs, sugar, vanilla, salt, cinnamon and baking soda in blender. Add to flour in large mixing bowl. Add chopped apples. (Stir with wooden spoon as mixture is thick.) Add nuts and/or raisins (optional). Grease and flour bundt pan. Bake in bundt pan for 1 hour at 350 degrees. Let stand 15 minutes before loosening sides with a knife and inverting onto plate.
