LOBSTER NEWBURG 
6 tbsp. butter
2 tbsp. flour
1 c. lobster, chopped
1/4 tsp. salt
3 egg yolks, slightly beaten
2 c. cream (one pt.)
3 tbsp. white wine
2 tbsp. lemon juice
1/4 tsp. paprika

Melt butter - blend in flour - add cream. Heat and boil 1 minute, stir constantly. Add hot mix by spoonfuls to egg yolks. Add to cream mix. Add remaining ingredients - heat, serve over toast or biscuits.
