LOBSTER NEWBURG 
8 tbsp. butter
1/2 c. flour
2 c. whole milk
1 c. half and half
2 tsp. salt
White pepper to taste
Dash of cayenne pepper
1/2 c. sherry
4 c. cooked lobster, shrimp or crabmeat
1/2 c. cracker crumbs

Melt the butter and add the flour, stirring to form a paste. Combine the milk and half-and-half and slowly add to the above. Add the salt, white pepper and cayenne pepper. Cook over medium heat until thickened and then add sherry.

Combine the sauce with the shellfish and pour into a 2 1/2 quart casserole. Top with cracker crumbs and bake at 300 degrees for 20-30 minutes. Serve with rice or patty shells.
