COOKIES FOR DIABETICS 
1 qt. applesauce
2 c. raisins
4 tbsp. sweetening liquid
1 c. chopped nuts
2 c. oatmeal
2 c. flour (or more to make stiff dough)
2 tbsp. baking powder
1 tbsp. baking soda
1 tsp. salt
1 tbsp. corn oil shortening

Add any spices you like such as: cinnamon, nutmeg or ginger.

Mix all ingredients well and drop on greased cookie sheet by spoonful. Bake at 350 degrees until done to the touch. Put extras in freezer as they keep well.
