HEAVENLY RICE PUDDING 
1 1/2 c. cold cooked rice
1/2 c. well drained canned crushed pineapple
1 c. confectioners' sugar
2/3 c. (sm. can) undiluted evaporated milk
1 1/2 c. diced marshmallows or 1 c. coconut
2 tbsp. lemon juice
1/2 c. well drained chopped maraschino cherries

Mix rice and marshmallows (or coconut), pineapple, nuts and cherries in bowl. Chill evaporated milk in refrigerator tray until soft crystals form around edges of tray 15 to 20 minutes. Then whip until stiff, about 1 minute. Add lemon juice and whip very stiff, about 2 minutes. Beat in sugar, fold whipped evaporated milk into rice mixture. Spoon into serving dish.
