CABIN ON THE LAKE MUFFINS 
1 c. raw bran in 1 c. boiling water
2 1/2 c. flour
2 tsp. baking soda
1 tsp. salt
2 eggs
1/2 c. corn oil
1 c. brown sugar
1 c. buttermilk
1 1/2 c. bananas (ripe), mashed

Cream oil, sugar, and eggs. Combine dry ingredients. Mix all together. Add ripe bananas. Mix the night before and let set at least 8 hours. (Keep refrigerated.) Bake in the morning at 400 degrees for 20 to 30 minutes. Use only foil laminated baking cups to avoid sticking. Makes about 1 dozen or more, depending on size of muffin tins. Sprinkle sugar, cinnamon, and nuts on muffins before baking.

These are by far the BEST, and I mean BEST muffins EVER!! I make them all the time, adding chopped apples, raisins to switch it up, or dried fruit and nuts. You don't actually have to leave the batter overnight, but it works both ways. So moist, tastey and I get compliments on them all the time. The best is that they are a fast, delicious, and nutritious recipe.
