BROCCOLI CORNBREAD | |
2 boxes Jiffy cornbread mix 4 eggs, lightly beaten 2 sticks butter, melted 1 c. cottage cheese, sm. curd 1 c. chopped onion 1 box frozen chopped broccoli (or use fresh) 3 hot peppers (optional) Grease or spray 9 x 13 inch pan. Melt butter in skillet then add chopped onions and frozen broccoli. Saute until broccoli is thawed. In large bowl mix cornbread mix, beaten eggs and cottage cheese, then add butter, broccoli and onions. Bake at 350 degrees for about 25 to 30 minutes. |
