POTATO SALAD 
2 lb. Irish potatoes
1/2 c. chopped celery
2 hard boiled eggs (chopped)
Mayonnaise
Dried parsley (optional)
Shredded carrots (optional)
1 tsp. mustard

Cook potatoes until well done. Cut in small pieces. Add celery, eggs and amount of mayonnaise desired. (Do not use salad dressing.) Add mustard, salt and pepper to taste. Parsley and carrots may be added for color if desired.
