EMMAUS CASSEROLE 
1/2 lb. sausage, bacon or ham cooked and drained
6 eggs, beaten
2 c. milk
1 (10 oz.) can mushroom soup
2 c. grated cheese (Cheddar, Longhorn, Colby) or mix
1 tsp. dry mustard
2 c. seasoned croutons
1 c. sliced mushrooms, optional

Mix together eggs, milk, soup, dry mustard. Layer in a 9 x 13 glass casserole.

Cover and let stand overnight in refrigerator. Bake at 325 degrees for 1 hour or until brown and set. You may double this easily. Enjoy.
