HAM FRIED RICE 
1/2 c. fresh or frozen peas
6 tbsp. vegetable oil
1/2 tsp. salt
2 eggs, lightly beaten
1/2 c. boiled ham, cut in one piece
1 scallion, finely chopped
1/4 head lettuce, shredded
3 c. boiled rice, cooled
2 tbsp. soy sauce

Cut the ham into 1/4 inch dice. Set a wok or 12-inch frying pan over high heat for 30 seconds. Pour in 1 tablespoon of oil and swirl it around until hot. Add the ham and peas and stir fry them for 1 1/2 minutes. Transfer to a big bowl. Wash the pan and place it over high heat for another 30 seconds. Add 3 tablespoons oil and wait until it gets hot. Add the chopped scallion and stir fry for a few seconds, then add the rice. Stir fry for 3 minutes until all the grains of rice are coated with the oil. Add to the bowl with ham and peas. Wash the wok and add the last 2 tablespoons oil.

Wait until the oil is hot, then add the beaten eggs. Stir fry for 2 minutes, then add the salt, peas, ham, rice, and lettuce. Stir fry for 30 seconds. Finally, pour the soy sauce into the pan and mix well, stirring constantly, until all ingredients are evenly mixed and all the rice is lightly browned. Wella! It's ready to serve.
