MEAT LOAF 
1 1/2 lb. lean ground beef
1 c. tomato juice
3/4 c. Quaker oats (quick or old fashioned, uncooked)
1 egg or 2 egg whites, beaten
1/4 c. chopped onion
1/2 tsp. salt (optional)
1/4 tsp. black pepper

Heat oven to 350 degrees. Combine all ingredients; mix lightly but thoroughly. Press into 8x4 inch loaf pan; bake 1 hour. Drain; let stand 5 minutes. Serves 8.

MICROWAVE DIRECTIONS: For mini-meat loaves. Shape meat mixture to form 6 (4x2 inch) loaves, place in 8 or 9-inch glass microwavable baking dish. Microwave at high 12 to 14 minutes, rotating dish after 6 minutes. Drain, let stand 5 minutes before serving. 6 miniature loaves.

Since microwave ovens vary in power, you may need to adjust your cooking time.
