CRAB MEAT AU GRATIN 
1 lb. white crab meat
2 1/2 oz. jar mushrooms
2 c. milk
6 tbsp. flour
3 tbsp. butter
3/4 tsp. salt
2 c. Cheddar cheese, grated
1 tsp. white pepper
2 tbsp. Parmesan cheese

Melt butter in skillet. Add flour and stir until well blended. Heat milk in saucepan until just before boiling. Add flour mixture and continue to cook over low heat, stirring constantly until sauce is thick and smooth. Add crab meat, mushrooms, half cup Cheddar cheese, salt and pepper. Pour into casserole dish that has been sprinkled with Parmesan cheese. Cove with crab meat mixture, rest of cheese. Bake at 375 degrees about 30 minutes.
