JALAPENO CORNBREAD 
1 c. cornmeal
1/2 c. oil
1 c. milk
2 eggs
1/2 tsp. baking soda
3/4 tsp. salt
1 can cream style corn

Have ready:

8 oz. grated cheese
1 onion, chopped
Jalapeno, sliced or 4 oz. green chili, choppedOptional: Saute 1 lb. hamburger or sausage

Heat oil in skillet and sprinkle small amount of cornmeal over oil and brown slightly on stove. Pour 1/2 of batter into browned skillet, layer with grated cheese, then chopped onions, (green chili or jalapeno) then (meat). Cover with rest of batter. Bake at 350 degrees for 45 to 50 minutes.
