VEGETABLE NOODLE CASSEROLE 
4 oz. egg noodles, uncooked
1 sm. onion, chopped
1 c. coarsely chopped fresh broccoli
1/2 c. milk
1/4 tsp. pepper
3 tbsp. fine, dry bread crumbs
1 stalk celery, sliced
1 sm. green pepper, chopped
2 tbsp. vegetable oil
1/4 tsp. salt
1 1/2 c. (6 oz.) shredded Monterey Jack cheese
1 tbsp. butter

Cook noodles according to package directions; drain. Set aside.

Saute celery and next 3 ingredients in oil until tender. Stir in milk and next 3 ingredients. Spoon into a lightly greased 1 1/2 quart baking dish. Cover and bake at 350 degrees for 15 minutes. Sprinkle with bread crumbs and drizzle with butter. Bake uncovered 10 minutes. Yield 4-6 servings.
