GERMAN POTATO SALAD 
2 1/2 lbs. potatoes (cooked, peeled, diced)
2 tbsp. chopped onion
3 tbsp. parsley (snipped)
4 or 5 hard cooked eggs (chopped)

DRESSING:

3/4 or 1 lb. bacon (diced)
3/4 c. sugar
1 tbsp. salt
1/8 tbsp. pepper
1/2 c. vinegar
4 or 5 beaten eggs

Mix together potatoes, onion, parsley and hard cooked eggs. Fry bacon. Add sugar, salt, pepper, vinegar and beaten eggs.

Mix and stir and bring to a boil until it thickens. Pour over potatoes. Makes a large bowl full.
