BLACK WALNUT FUDGE | |
3 cups sugar 1/4 tsp. cream of tartar 1/4 tsp. salt 1 cup milk 2 tbsp. butter or margarine 1 tsp. black walnut flavoring 1/2 cup nuts, chopped (any kind) In a heavy-bottom saucepan, combine sugar, cream of tartar, salt and milk. Cook to soft ball stage (238°F on a candy thermometer). Stir frequently to prevent scorching. Wipe down sides of pan using a damp cloth or water-dipped silicone brush to prevent crystallization. Remove pan from heat and add butter. Cool without stirring until mixture reaches 110°F (lukewarm). Stir in flavoring. Beat until mixture is creamy; stir in nuts. Pour into a greased 8x8-inch square pan. Mark into squares using a sharp knife. Makes about 1 1/2 pounds. |
