20 MINUTE CHICKEN PARMESAN 
4 boneless chicken breasts, skinned
1 egg, slightly beaten
1/2 c. seasoned bread crumbs
2 tsp. butter
1/2 med. onion, diced
1/2 sm. green pepper, diced
3 fresh mushrooms, sliced
1 3/4 c. spaghetti sauce
1/2 c. shredded Mozzarella cheese
1 tbsp. grated Parmesan cheese
1/4 c. chopped fresh parsley or parsley flakes

Place onions, peppers and mushrooms in skillet and saute until slightly tender. Flatten chicken out with your hands for even thickness. Dip chicken into egg, then into crumbs to coat. Brown chicken on both sides along with peppers and onions in butter at medium heat.

Add spaghetti sauce, reduce heat, cover; simmer 10 minutes. Sprinkle with cheeses and parsley. Cover; simmer for 10 or more minutes, or until cheese melts. You may want to season chicken before coating with egg and crumbs. Sprinkle moderately with garlic powder, Italian seasoning, salt and pepper.
